Ingredients

  • 1lb Ground Bison
  • 2 tablespoons vegetable oil
  • 1 to 1 1/2 cup diced onion
  • 1 to 1 1/2 cup diced green pepper
  • 2 to 3 jalapeño peppers ((depending on how hot you like it) )
  • 2 16 oz cans diced tomatoes, undrained
  • 1 16 oz. can dark red kidney beans, drained
  • 1 15 oz. can pinto beans, drained
  • 1 4 oz. can chopped green chilies
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

In a large kettle or Dutch Oven, brown meat in oil, drain.
Saute onion and pepper for 5 minutes.
Stir in ground bison and remaining ingredients and bring to a boil.
Reduce heat; cover and simmer 1 1/2 to 2 hours.
Serve with shredded cheese and/or sour cream. For added hotness, sprinkle with Tobasco® sauce.
