Thai Crispy Tofu Tacos with Red Cabbage Ginger Slaw & Almond Butter Sauce

Ingredients

Crispy Tofu

  • 1lb extra firm tofu (drained and cubed)
  • 2 tablespoons cornstarch
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 pinch crushed red pepper flakes
  • 1 tablespoon coconut oil (or vegetable oil of choice)

Red Cabbage Slaw

  • 1 cup sliced red cabbage
  • 1/2 Small jalapeno (diced)
  • 1 Medium carrot (finely chopped)
  • 2 scallions (chopped)
  • 1 handful cilantro (chopped)

Slaw Dressing

  • ¼ cup lime juice
  • 1 Small garlic clove (minced)
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon wheat free tamari
  • 1 teaspoon chili garlic paste
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon agave syrup
  • 1 pinch crushed red pepper flakes

Slaw Dressing (Optional)

  • 1 - 2 drop doTERRA Lime Essential Oil
  • 1/2 Small jalapeno (diced)

Almond Butter Sauce

  • ½ cup smooth almond butter
  • 2 tablespoons wheat free tamari
  • 1 Small garlic clove (minced)
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon chili garlic paste
  • 2 - 3 tablespoons agave syrup
  • 1 lime (juiced)
  • 3 - 5 tablespoons hot water

Directions

Crispy Tofu
Heat cast iron or non-stick pan on medium high heat. Dredge the tofu in cornstarch, sea salt, black pepper, garlic powder, and crushed red pepper flakes, coating all sides of tofu cubes. Heat oil in pan. Add tofu and do not disturb for about 5 minutes, lowering heat if tofu begins to burn. After about 5 minutes, if tofu has reached desired crispness, use a spatula to turn over and crisp the other side. Some of the tofu cubes will stick together, which is good, as it allows you to flip the tofu in one layer. When tofu is finished cooking, remove from heat.

Slaw Dressing
Mix all ingredients in measuring cup, whisking to blend. Set aside.
Almond Butter Sauce
The slaw dressing and almond butter sauce can be prepared the day before. If you refrigerate the almond butter sauce, bring to room temperature before using in recipe.

Mix all ingredients in measuring cup, whisking to blend. Water is added to desired thickness. Set aside
To assemble tacos:
Steam tacos until soft. Add a layer of tofu on top of taco, followed by slaw. Drizzle with almond butter sauce. Serve with Cilantro Rice.
