Ingredients

  • 1 cup plum tomatoes seeded and diced
  • 1 ¾ cup diced ripe mango
  • ¼ cup diced red onion
  • ¼ cup chopped dry cranberries
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt pepper to taste
  • 1 clove garlic minced
  • ¼ cup olive oil
