1 tablespoon chili powder and Cajun seasoning mix (50-50 mix)
salt to taste
1 tablespoon chopped cilantro (fresh)
pin head of ghost chili paste (any chili pepper or hot sauce will work…just depends how hot you want it)
2 tablespoons canola oil
Bring a sauté pan to a high temperature; add canola oil, onions, peppers, tomatoes, and garlic and sauté until onions become translucent. Add the black beans and seasonings to the vegetable mixture. Continue to cook on a med heat until beans are almost tender. If additional liquid is needed I recommend using some type of stock (beef or chicken). Once beans are almost tender add your chopped plantains and cilantro and cook until beans are tender. Adjust any seasonings, serve and enjoy.
