Grilled Chicken Sammies with Curried Mango Spread

  • 1/4 teaspoon Garlic Powder ( )
  • 1/4 teaspoon Sea Salt ( )
  • sprinkle Freshly Ground Black Pepper (to season)
  • pinch Cayenne Pepper
  • 1 1/2lb Chicken Thighs (skinless, boneless)
  • 2 Mangos
  • 1 tablespoon Water
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Dijon Mustard
  • 2 cloves Garlic
  • 1/4 teaspoon Curry Powder
  • 1 tablespoon Cilantro (chopped, fresh)
  • 4 Trader Joe's Gluten Free English Muffins (split in halves)


Combine garlic powder, sea salt, black pepper and cayenne pepper.
Sprinkle chicken with this mixture. Grill on bbq grill or use stovetop grill pan, until done on each side. When chicken has cooled slightly, slice.
While chicken is cooking, grill the mango slices until grill marks appear, turning to cook each side. Place in food processor with water, vinegar, mustard, garlic, curry and cilantro. Process just until smooth.
Toast English Muffins in toaster oven or grill to desired
To assemble sammies, spread a spoonful of Curried Mango Spread on the bottom half of the English Muffin. Add the chicken and top with additional Curried Mango Spread.
