Amarone Wine and Mango Puree

  • 2 mangoes
  • rendered duck fat
  • 2-3 tablespoons Amarone wine
  • pinch salt


Peel, chop and puree 2 mangoes in food processor until smooth (approx 2 minutes). Return same pan used to cook duck to medium heat. Add 2-3 tablespoons of Amarone wine to deglaze drippings and anything else stuck to pan. Add mango puree and whisk to combine. Add salt.
